Rose Battenburg Cake

Tomorrow is my parent's 23rd anniversary. They've been together 23 wonderful years! (20 of which were awesome, I'm guessing :P !)

Well, yes: you guessed it: I baked a cake! =D

I wanted to do something romantic but fun at the same time, so I finally decided on this new type of cake I came across while reading one of my favorite blogs : Sprinklebakes 
It's called: Battenburg, basically it's a looong sponge cake that when cut would show a yummy two-by-two check pattern of 2 colors. 


I covered mine with rose-imprinted fondant and placed a bright red delicious flower I made (also from fondant) a couple of days ago. What do you think?

For the history lovers: It's called Battenburg since it was created in honor of the marriage of Queen Victoria's granddaughter to Prince Louis of Battenburg in 1884. The four resulting squares represent the 4 Battenbourg princes: LouisAlexanderHenry and Francis Joseph.

Now back to the yummy-ness:

It's a pretty easy cake to bake, you just have to have a large pan with some parchment paper. You fold the paper in half and place in the pan - crease side up. Here's a picture to explain what I mean. The cake batter is already in as you can see :P

For the cake I used the same recipe from Sprinklebakes.

What you need: 
  • 1 cup softened butter 
  • 1 cup sugar
  • 3 eggs
  • 1/2 tsp almond extract
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1-2 tsp milk (if  too thick)
  • 1 drop deep pink gel food coloring 
  • 1 drop green gel food coloring
  • 1/2 cup apricot jam 
  • FONDANT =D
  • Marzipan

What to do:
  1. Cream together the butter and the sugar.
  2. Add the eggs one at a time.
  3. Sift all the dry ingredients in another bowl and add them gradually to the mix. Mix until incorporated.
  4. Add some milk if the batter is too thick.
  5. Split the batter in half and add the food coloring to each bowl. 
  6. Using a spoon, place the batters into each side of the pan.
  7. Bake for 40 min at 175 degrees. Take out once a toothpick inserted in the middle of the cake turns out clean. Leave to cool.

How to assemble the cake:
  1.  After the cakes cool, place them on top of each other.
  2. Trim the edges as you see fit and cut the cakes in half.
  3. You should now have 4 long 'cakes': 2 pink and 2 green.
  4. Place one green and one pink cake next to each other and smother them with some jam. 
  5. Place the other two cakes and glue them with the jam.
  6. If you have some marzipan on hand, roll it long enough to cover the entire cake.
  7. Then roll it over the cakes and make sure the whole thing is tight enough not crumble when cut.
  8. Roll out your white fondant. I used this Wilton flower imprinting mat I have and made this pretty flower imprint on my fondant. Then I wrapped it around the cake and placed a flower I made a while ago on top.


Cut and be dazzled! =D
